Patrick Jones and Matt Johnson glasses , two former brewing students from Heriot-Watt University, are setting up their own brewery, called Pilot Beer, on the Jane Street Industrial Estate in Leith. They have bought the brewing kit from McCowan s Brewhouse pub at Fountain Park and are preparing to brew their first beers next week.
